Coffee Cake In a Mug

I love simple and fun recipes, like baking things in a Microwave!! So I came across this fun post by Prudent Baby, on making coffee cake in a mug. It's pretty simple really, you begin by adding a Tbs of Butter (softened) in a coffee cup, then add in 2 Tbs of sugar and cream together til fluffy. 


 Then I added in an egg. I wish I didn't do this part because it ended up making my cake taste way too eggy..but over at Prudent Baby, she said it was optional and she only used half an egg for one cake. Wish I had done that! Then you add 2 Tbs of Sour Cream and a few drops of Vanilla. Mix well. Then add in 1/4 c of flour and 1/8 tsp of baking powder and mix.
In between times, make the crumb topping in a separate bowl: 1 Tbs butter, 2 Tbs flour, 1 Tbs brown sugar, and 1 tsp cinnamon. Moosh together with your fingers to get the crumble texture. Top the crumb mixture on your cake and bake in the microwave for the time needed!
  At Prudent Baby, she says to start with 1 minute and add 10 seconds extra each time until done. I did this and it came to about 3 minutes total, til it was cooked through. 
As you can see here, mine turned out a mess.
 But once I plopped it out of the mug and onto a plate...
Topped it with whipped cream and it's a little cuter! :)
