Chocolate Red Wine Cupcakes + Recipe

  My brother turned 21 on April 27th, so I wanted to make him some "specialty cupcakes" using the Chocolate Shop Wine I had on hand. To make Chocolate Red Wine  Cupcakes, I followed the recipe over at Table For Two Blog, and they came out delicious! Made my whole house smelled so good.

    Ingredients needed:

6 tbsp. unsalted butter, room temperature
3/4 cup dark brown sugar, packed
1/4 cup granulated sugar
1 large egg + 1 large egg yolk, room temperature
3/4 cup red wine (any kind you like)
1 tsp. vanilla extract
1 cup + 1tbsp. all-purpose flour
1/2 cup Dutch cocoa powder
1/8 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. ground Cinnamon

Pre heat oven to 325 degrees and mix together flour, cocoa powder, baking soda, baking powder, salt, and cinnamon in a large bowl. In another bowl, cream together butter and sugars for 2 minutes until light and fluffy. Then add in the egg and egg yolk, beating well. Next add in the wine and vanilla. Slowly add in the dry ingredients to the wet mix, and blend all together.  Scoop batter into a lined or greased muffin pan and bake for 20 minutes or so. Test middles with toothpick to be sure it's done. Let cool and frost with your choice of frosting, or enjoy as is with no frosting. I used Butter-cream frosting for mine!
