Homemade Pizza Pocket Dough

When trying to figure out dinner the other day, I was so excited to come across Money Saving Mom's Freezer Friendly Pizza Pocket recipe! Not only is this recipe simple to make, it's also delicious!! 


To begin you need:

2 Tablespoons of active dry yeast
2 Cups of Warm Water
2 Teaspoons of Sugar
2 Teaspoons of Salt
4 Tablespoons of Oil
5 Cups of Flour

And then whatever filling you would like to fill these pockets with! I used a mixture of saucy ground beef, rice, and cheese 
to give them a Mexican twist, but you could also fill them with pizza sauce, cheese, and your choice of meats...

I'd imagine these pockets would also taste great if you went a sweeter route, filling them with jellied fruits, or chocolate! Yum...

 So to begin making the dough for these pockets, you mix the yeast and warm water together until it's dissolved. Then you add the sugar, salt, oil, and flour. Mix well until it begins thickening into a ball, and dump the dough into a floured surface. Knead the dough ball for 3-5 minutes, then divide it into 15-20 pieces give or take depending on the size you would like them. Roll each piece into balls and flatten them with a rolling pin. Drop a few tablespoons of your filling into each one, fold over, and seal. I like to crimp the edges with a fork to give it a nice look. Place the pockets on a greased cookie sheet and cook them in the oven at 500 degrees for 10-15 minutes (again give or take as all ovens vary), until browned. Once they are completely cooked, let them cool, and you can eat them as is, or freeze them in an airtight Ziploc freezer bag. They will last 2-3 months in your freezer. If you do freeze them, when you're ready to eat, just pull them out of the freezer and microwave individually for about 2 minutes or until heated through. OR you can pop them in the oven at 350 degrees for 20 minutes or so. The dough makes these taste incredible, they are great to make ahead for later meals!
